The Best Macaroni and Cheese

3 T. butter
3 T. flour
1 tsp. onion powder
2 c. milk
8 oz. sharp Cheddar (I just use whatever cheese I have)
8 oz. cut-up ham
2 c. uncooked macaroni noodles

Boil macaroni until almost, but not quite, tender. While that's cooking, melt butter in saucepan. Add flour to make a roux (paste) and slowly stir in milk. Cook until it starts to thicken. Stir in onion powder and grated cheese, and let melt. Pour over macaroni, add ham and mix together. You can serve it right out of the pot or put in a greased casserole dish and bake at 350 degrees for 45 minutes. I usually triple this recipe for my crowd!
